To-Do Tuesday 2010 – Week 6

This past week was pitiful. I didn’t get a lot done, I over did it this weekend and paid for it on Monday, I forgot to update my list, and this weeks list is a wee bit late. But, this weeks list has some big things that I must get done. I am on a mission…I am going to actually put a huge dent in this list if not complete it. I have seemingly slipped back into a rut, and have once again made the decision to kick it into 4-wheel drive & baja out of it. This week has been a bit rough so far, but here’s my list…so I say, ‘Bring it on, week 6!’
1. Stick with the Family Challenges!
2. File taxes!
3. Stick to weekly menu plan. (Only did about half the week, so I get half credit!)
4. Not scare our neighbors cheering for our friend Dave Pittman on American Idol!
5. Have a serious discussion with hubby about our family vacation…in July.
6. OPEN AN ETSY STORE!
7. Get back in the cleaning/decluttering groove.
8. Order handle for washing machine door so I can stop hurting myself doing laundry!
9. Enjoy date night with Greg on Thursday!
10. Remember to update progress on To-Do List! (whaddya know…I did it!)
11. Slowly get into exercising without hurting myself…still sore sometimes…kinda thinking this will NEVER end.

Menu Monday

Well, after several requests, I have decided to share some of my menu secrets with my well deserving readers. We are a family of 6 every other week, and a family of 3 the other week. I do not cook a different amount of food during our ‘off’ week. Greg takes any left overs to work for lunch, and if their happens to be additional left overs…Grayson and I eat them for lunch the following day. There typically isn’t enough left over to freeze for another meal unless I double the recipe. I often will prep extra ingredients to use later in the week…especially chicken breast, ground beef/turkey or chopped veggies. Planning a menu actually helps save money, and time. It makes it easier to make a grocery list, match up coupons/price match, and not have to run to the store for forgotten ingredients or to a restaurant because of forgetting to take something out of the freezer. I typically make my menu for 2 weeks at a time and only do serious grocery shopping twice a month. Any additional grocery shopping is done for additional milk or bread. Okay…there’s a couple tips for this week, now for my menu!

I’ve linked to the recipes I use if available, and listed any substitutions or alterations I make to the recipe. We usually have a canned veggie or potatoes as a side, unless I’ve found a good deal on fresh veggies. We also have homemade crescent rolls quite often…if you have a bread machine, these are delicious & easy to make!)
Tilapia Parmesan (Rather than hot sauce, I use a pinch of crushed red pepper flakes, and I use freshly grated parmesan cheese.)
Chili
Corn Dog Casserole (I found Jenny-O turkey franks at Wal-mart for $1 a package this week, which will make this healthier!)
Meatloaf (I don’t have a recipe for this one…I typically just throw things together. A few of my key ingredients are ground beef/turkey, egg, oats, french fried onions, cheddar cheese, chopped onion, and Emeril Lagasse’s Essence or Ranch Dressing Mix)
Well, that’s the menu plan for this week. There is a day this week that we are planning on going out for dinner so that evening’s meal will either be prepped and frozen for later use or just bumped until the next day.

Thrifty Thursday

I’m back! This post isn’t my typical Walgreen’s Smack down post. I haven’t made a Walgreen’s run since December, but that doesn’t mean I haven’t been thrifty. One of my goals this year was to make and follow a budget. I spent an entire day constructing a super lame spreadsheet. I did good following it and keeping track, but it took up so much time, and it wasn’t what I wanted. My super genius husband began building me a program…and then it happened. I discovered Mint.com.
Mint.com is a web based personal finance software that is FREE. You read that correctly…FREE. I spent an hour or so last night setting it up the way I wanted, then I headed to bed. Of course, since yesterday was my coffee day I was a bit wired even at 12:30, so I began looking for apps to download. Whaddya know…there is a mint.com app…and it’s FREE! Okay, enough with the ‘FREE’s’ on to the details of this wonderful discovery.
The first thing you do is set up your account. You enter your online banking information (it’s totally secure), and it automatically imports all your transactions. You enter vehicles, loans, investments, etc. Then you begin the planning portion…my favorite part. I consider budgeting an art. Most of the time I totally screw it up, but God always makes it work out in the end. There are preset categories, with subcategories even…you can also enter your own. As transactions come through the bank, you apply them to your budget (it may do this on it’s own…I haven’t gotten that far yet), and it can even show you where you can save money…who wouldn’t like that? As of right now, I see no negatives about this site or the iphone app, so if you’re looking to make a change in your finances or just keep track of things in an easy and FREE way…check it out!

To-Do Tuesday 2010 – Week 5

Can you believe a whole month of 2010 has already past?! It seems a little crazy that we are already in February… With all that has been going on, I really feel I have lost my mojo. I haven’t been able to clean like I want to, my blogging has been minimal, I have gotten out of the organization groove, and a lot of other stuff. This alone has made me very frustrated and a bit moody…big apology to my family for having to deal with my crap. ;) Most of this week is continued from last week. I still can’t lift anything very heavy or stay bent down for very long…kinda makes serious cleaning impossible. Anyways, enough whining…on to the list!
1. Stick with the Family Challenges!
2. Re-vamp budget…having a few issues.
3. Stick to weekly menu plan.
4. Post our family menu plan…and try to include pictures/notes on each recipe!
5. Get my blogging mojo back.
6. OPEN AN ETSY STORE!
7. Get back in the cleaning/decluttering groove.
8. Plan a date night with hubby! It’s been waaaay too long.

Snowy Saturday

Our first real snow of the year (received a few weeks ago) was quite puny. Four tiny inches kept the kids out of school for 4 days…LAME.

This past week’s snowfall was fantastic. We received somewhere between 10 & 12″ of snow Thursday evening through Friday midnight.
(Kids were out of school Friday, but back to school today.) What better way to enjoy the weekend with the kids than constructing forts & having a huge snowball fight?
The girls decided they wanted to team up against us and Grayson…big mistake. ;) We quickly realized the best way to build our fort would be to use one of the BIG buckets.
The girls started out with Tupperware, but soon switched over to the other BIG bucket. Their design was based upon ours, but not quite put together properly.
Before the huge snowball massacre fight, Grayson made his very first snow angel…adorable.
There were only 2 direct hits to the face delivered during the snowball fight…one inflicted (accidentally) by me – pelting Kylie…causing about 7 minutes of silent tears, while still standing in the direct line of fire, and one mystery ball exploding on impact with Greg’s face.
Grayson, the self proclaimed medic, came by to check on Daddy.
The girls turned on each other at one point, before ultimately turning on Greg…he of course was the victor in that battle.
Overall we had a wonderful time and made some great memories. I so wish we lived somewhere that we didn’t have to wait several years to get a snowfall like this. We ended the perfect day with some perfect homemade brownies…YUM!
