Menu Monday

Our schedule this week is totally insane, so if we stick to this it will be a miracle…I am so ready for school to be over!

Princess2T is finishing up tumbling for this year, there’s practices, photos, rehearsal, & recital in the next couple weeks.  She also has a few school activities in the evenings this week, so hopefully we can get everything squeezed in.  Pickle finished up her activities a couple weeks ago, so she’s just along for the ride.  Chubbs has a lunch thing this week, so Big Puppy may be able to surprise her with that…if his schedule allows.  Froggy has his rescheduled soccer awards this week…he is crazy excited about getting a trophy!  Big Puppy is having to miss his weekly tennis game with his friends because of all these activities…poor guy!  Is your schedule as crazy as ours?

Monday ~ Sweet & Spicy Meatballs w/ steamed broccoli

Tuesday ~ McDonald’s 1/2 price Happy Meals (I know we did this in May already, but we’ve got 3 different things going on Tuesday night…I cannot add cooking into the schedule.)

Wednesday ~ French Toast Casserole w/ strawberries

Thursday ~ BBQ Pork Sandwiches w/ coleslaw (I’m going to attempt to make my own hamburger buns to use for these…I’ll let you know how they turn out!

Friday ~ Sausage, Onions & Peppers

Saturday ~ Slow Cooked Beef Stroganoff w/ sweet peas

Sunday ~ Turkey Bake

Menu Monday ~ 5/9

Well, it’s nearing the end of the school year, and we have LOTS of activities going on.
Monday ~ Grilled Chicken, corn on the cob, & sweet potato fries (Putting Big Puppy to work since he got such a fantastic birthday present…a gas grill…which was actually kind of a present to myself.)
Tuesday ~ McDonald’s 1/2 price Happy Meals (Princess2T has tumbling practice, then an 1.5 hours later, Pickle has her class program, so hoping to minimize the trips into town & get everything squeezed in.)
Wednesday ~ Tacos (Gotta be something quick & easy because we’ve gotta squeeze homework & showers in before church.)
Thursday ~ Spaghetti & Meatballs (Good ol’ standby…if I haven’t passed out from sheer exhaustion, we are going to have movie night w/ a FREE Redbox movie.
Friday ~ *hopefully* Dinner at new Italian restaurant in town! (There’s a new place in town that I’ve been really wanting to try & my Mom gave us date night money for our birthday’s…how convenient is that!?)
Saturday ~ Turkey Cabbage Bake
Sunday ~ Pizza-getti (We can’t have this when the girls are here because of Pickle’s dairy allergy…I mean, we *could* if I gave her something else, but that’s just torture. Yes, it’s that good.)

Menu Monday ~ 4/25

Last week, I didn’t have a menu…every once in awhile, I get in a mood where I want to wing it, and I realize quickly it is not a good idea. But by that time, it’s too late, and I’m stuck winging it. This past week, I had a meal in mind for dinner that needed to slow cook in the crockpot for 6-7 hours. For 3 days in a row, I forgot to put this in the crock pot in time. Needless-to-say, if I don’t have a plan, I’m a mess. This weeks menu consists of several things we’ve never tried, so I will try to post photos after I prepare each particular meal…unless it’s ugly or I fall off the menu wagon. ;) Oh, and I’m planning on making a massive cake for Saturday…we are celebrating Chubbs’ 8th, Big Puppy’s BIG 3-0, and my 30ish birthday. Big Puppy decided he didn’t want a party (he’s a loon), so I un-invited the few I had invited early…the plan is now just the family hanging out, taking turns opening presents, & eating cake. Okay, enough of that…here’s our menu!

Monday ~Roast Beef Wheels w/ pickle spears & Sun Chips

Tuesday ~Ham & Cheese Quiche w/ Grapes

Wednesday ~Italian Pork Chops w/ mashed potatoes & salad

Menu Monday ~ 4/18

Well, I’m a little late getting this posted…it’s been a slightly hectic morning. It started out great, then I got a phone call from the school that Princess2T was running a fever and I needed to go pick her up. My day went from relaxing and getting housework to rushing to get Froggy out of the bath, grab my coffee, and head out the door. So today I’ve been all over the place/a little scatterbrained, but I’m pulling it together! Here is our menu for the week!

Monday ~ Basil Chicken w/ peas & rolls

Tuesday ~ Roasted Sausage, Peppers & Onions w/ Mashed Potatoes

Wednesday ~ Make Ahead Spaghetti & Meatball Casserole w/ salad & Texas Toast

Menu Monday ~ 4/11

Last week was pretty good, menu-wise.  We followed the menu except for 1 day because of a last minute change of plans, so this week we are going to do a freezer/pantry clean out week.  We will be carrying over the Green Eggs & Ham Cups from last week, then using whatever I happen to have in the pantry/freezer to fill the rest of the week.  The weather has been beautiful here the last few days so it’s got me in the Spring Cleaning mood!  What better place to start then the kitchen?

Monday: Green Eggs & Ham Cups w/ hash browns & strawberries (figured I’d add a pic since this didn’t post yesterday…BONUS!)

Wednesday: Chili w/ grape salad (it was a huge hit on Sunday, so I figured I’d go for it again since I have some grapes left over)

Friday: I think we are going out to eat…if Big Puppy didn’t forget we had date night planned. ;)

Saturday: Grilled Steaks (not sure about which marinade yet) w/ baked potatos & green salad

Sunday: Breakfast for dinner – eggs, sausage, pancakes & fresh fruit

Menu Monday

I’m finally back into the groove of normal life as opposed to vacation/company life…and we are finished with our diet (we’re on the phase that you start integrating carbs & sugar back in…yeah!) The final tally was I lost 13 lbs, and Big Puppy lost 22lbs…now to maintain & tone up! We will be eating the same stuff as the kids again, but plan on limiting starches & sugars. Very excited to be returning to some sense of normality. So back to the menu!

Monday ~ Meatloaf, mashed potatoes, green beans
Tuesday ~ Cuban Sandwiches, green salad & chips
Wednesday ~ Green Eggs & Ham Cups, hash browns, & strawberries
Thursday ~ Grilled Orange Chicken Tenders, steamed broccoli, & brown rice
Friday ~ Slow cooked BBQ chicken, corn on the cob, baked beans
Saturday ~ Broiled Steak Bites, Baked potato, steamed green beans
Sunday ~ Jerky Turkey Burgers, sweet potato fries, and fruit salad

Menu Monday ~ 3/7

Well, tomorrow Big Puppy and I begin Stage 3 of ‘The Diet’. This means we can eat a wider variety of foods, take in more calories per day, and exercise! I never thought I would say this, but I can’t wait to start exercising.  As of today, Big Puppy has lost over 19lbs, and I have lost over 12lbs…we are both within a few pounds of our goal weight!  How exciting!  Since we’re hitting Phase 3 before the girls come back, we’ll be able to all eat the same thing again, yeah! (There will be a few exceptions since Big Puppy & I can’t have starch or sugar.) Anyway, here’s our menu plan for this week…

Monday – Chili

Tuesday – Cheesy Chicken & Broccoli Soup

Wednesday – Pepper Crusted Steak w/ Caramelized Onion

Thursday - Cold Curried Chicken Salad

Friday - Pot Roast

Saturday - Beef & Cabbage Soup

Sunday – Spaghetti

I also plan on surprising Big Puppy with a little Phase 3 Chocolate that we can occasionally snack on. I know he’s missing his sweets. =) Here’s the recipe I plan on using…

Phase 3 Chocolate


2 Tbsp. virgin coconut oil or butter

3 Tbsp. cocoa powder

Stevia to taste


Melt coconut oil or butter.  Mix in cocoa powder and stevia to taste.  Adjust the level of cocoa or oil to achieve desired consistency.  Enjoy warm as a chocolate dipping sauce for fresh fruits.  Or add a Tbsp. of chopped nuts & refrigerate to harden. Makes 1 serving

Doesn’t it sound yummy?  I’m excited about the wider variety, tomorrows shopping trip…not-so-much. Menu Monday ~ 2/28

Wow…I can’t believe February is over! This year is really flying by. As of right now, I’m totally cool with it because it’s just one day closer to the beach, but once I’m on the beach, time needs to slow way the heck down! Anyway, I totally abandoned last weeks menu, hopefully I’ll do better this week.  It’s a ‘clean out the pantry/freezer’ kind of week, plus it’s busy-busy since it’s our ‘on week’ with the kids.  I’m also going to show our diet foods for the week to give you a little more insight. =)

Monday - BBQ Pork sandwiches & coleslaw // Chili,  sliced tomato & baked cinnamon apples

Tuesday - Breakfast for Dinner // Sweet & Sour Chicken, cooked cabbage & Warm Spiced Oranges

Wednesday - Turkey BLT & chips // Roast Beef, spinach & Sweet Strawberry Soup

Thursday - Chili Mac & green beans // Creole Gumbo, Apple Cookies

Friday – Burrito, corn // Shrimp Scampi, spinach & Frozen Grapefruit Spears

I also plan on attempting homemade marshmallows dipped in chocolate for Valentine’s Day…here’s the recipe I’m going to attempt.

Menu Monday ~ 1/17

A few months ago, I started using this system called ‘Make 5 dinners in 1 hour’.  I had seen it on a friends blog, and figured I’d check it out.  I absolutely love it.  The way it works is you are emailed 20 recipes for the month, along with instructions and a grocery list.  You pull out which week of recipes you’d like to use, take the grocery list & mark off anything you already have on hand.  After you shop for the items you will need for the week, you then take out all the items you will need to prepare the meals…as in cutting board, bowls, storage containers, foil, measuring spoons/cups, etc. as well as, all the food you need to prep the meals.  Then you follow the step by step instructions to assemble your meals for the week.  They don’t take up a ton of room in the fridge, and if you label, everything is simple to locate when it’s dinner time.

3 out of 5 meals for the week

Since our weeks are not typical weeks, (we go from Friday to Thursday because of our custody arrangement) I like to take Saturdays or Sundays to prep my meals for the next week.  That way I can either bust it out while my husband watches the little one, or my girls can help me and start learning some domestic skills.  Also, since there are only 5 meals available per week, you will either need to eat leftovers (which are rare at our house), or throw in a few of your own recipes.  Typically on Tuesdays, my oldest daughter has tumbling, so we do the McDonalds 1/2 price Happy Meals & a free redbox movie, but this week is the sacrifice week for the Haiti Orphanage, so we’re not doing that. (I’ll post about that later…)  So here’s the rundown for this weeks menu:

Friday – Monte Cristo Sandwiches w/ Sliced Oranges, Strawberries, & Grapes

Saturday – Grilled Cheese & Turkey Sandwiches

Sunday – Saucy Strip Steak w/ Steamed Broccoli & Mashed Potatoes

Monday – Southwest Chimichangas w/ Chips & Queso

Tuesday – Italian Baked Bow Ties w/ Rolls, Corn & Salad

Wednesday – Slow Cooker Chicken Lasagna w/ Salad

Thursday – Messy Pete’s (our homemade Sloppy Joe’s)

There are some days that I have to make something special for our daughter that is allergic to milk…like on Monday she is having chili that I froze for her, and on Wednesday she is having a mini meatloaf.  I also occasionally throw in a dessert…we had pumpkin bread on Friday with the Monte Cristo Sandwiches, and we often have ‘Healthy Smoothies’…still working on a solid recipe for that one.  My only complaint about the ‘Make 5 Dinners in One Hour‘ plan is that it is more expensive then I’m used to.  Otherwise it is awesome.  We get to try many new recipes, plus I don’t have to worry about remembering to come up with something for dinner every day.  If it sounds interesting to you, I would suggest trying the sample menu found on her page.  Bon Appetite!
