I skipped out on last week, I know, I know…I’m terrible. I’ve been a bit overwhelmed lately with random drama and just typical wife/mom stuff, but I think I’ve finally got it all under control. Of course, my allergies are a different (totally out of control) story. Claritin was worthless, so now I’m trying Zyrtec…we’ll see how it goes. I’ve been having to experiment with some stuff because of newly discovered food allergies in my household, so you’ll have to stick with me…it’s been a bit strange. For instance, Sunday night I was preparing Tilapia Parmesan, but K#1 is allergic to milk so she can’t have it because of the butter, mayonnaise, and parmesan cheese…so I improvised and made hers a little different. Here’s our menu plan for the week, with a few new dairy-free recipes thrown in here and there.
Pan Fried Tofu w/ Spicy Peanut Sauce (I know I put this one on a couple weeks ago, but I was stuffy the night I was supposed to prepare it and felt that giving tofu it’s 2nd chance on a night I couldn’t taste again was very fair…so I didn’t make it yet. Wish
me it luck!)
Dairy-Free Smoothie I’ll be giving this to my sweet ‘dairy-free’ girl as a treat, plus it’s good for her!
Heavenly Angel Food Cake I thought this would be a good snack that is dairy-free and isn’t too sugary, but still gives you the sense of eating a dessert…perfect for my little ones!
